Pitching a project at a conference

Nathan - I know you don't query an unfinished project, but is the same true for pitching a project to an agent or editor at a writing conference? There is a conference coming up next June that I'd like to attend, but I won't be ready to query for at least a few months after that. However, I expect to be far enough along to be able to deliver a coherent pitch. If an agent is interested after you pitch, do you have to query right away?
Alternatively, if I don't pitch at this conference but I do meet some agents there (at a reception, for example) and informally mention the project, would it make any difference in my query some months later if I mention having met them and mentioned this project to them (assuming they express at least a slight potential interest)?
